Korean Winter Street Food


In winter, one of the factors that excites people is street food. One of the most popular winter street foods is the fish-shaped bun (Bungeoppang). It is a fish-shape with various creams inside of the bun. In the past, there was only red bean paste and mustard cream paste, but nowadays, there are various flavors, like pizza, sweet potato, chocolate, mint chocolate, and others.

The most popular theory is that taiyaki originated from the Japanese bream bread, taiyaki (たい焼き). In the 1900s, Imagawayaki, a flour dough filled with red beans and baked in a round mold, was popular in Japan. In 1909, Tokyo's Naniwaya Bakery stamped Imagawayaki into a variety of molds, including baseball bats, airships, and money, but the fish-shaped bream buns were said to be the most popular.

Bream Bread was brought to Korea from Japan in the 1930s, but not many people were able to taste it because flour was not common at the time. After the Korean War, flour became common thanks to American grain aid, and taiyaki bread became popular. Koreans baked it in molds shaped like Crucian Carp. The difference between Bream Bread and Crucian Carp Bread is the tail. Sea bream bread has a raised tail, while taiyaki bread has a horizontal tail and body.

In the late 1990s, Crucian Carp Bread was at its peak, with many Crucian Carp Bread vendors located in front of subway stations, next to traffic lights, and other places with high foot traffic. Many people who lost their jobs during the 1997 IMF foreign exchange crisis started Crucian Carp Bread businesses. Crucian Carp Bread businesses, which require only a Crucian Carp Bread mold and a lorry, became one of the most popular business start-ups during the recession. According to an old article, sales of Crucian Carp Bread molds increased by 20% from the previous year.

I still remember people selling Crucian Carp Bread in front of the subway and bus station. Therefore, after school and at the academy, I used to buy them as I was waiting for the bus or subway. A little fun fact regarding the Crucian Carp Bread is that people can determine individuals’ personalities depending on the first bite. If they eat the tail first, people tend to be more sensitive and focus on details. If they eat the head first, they tend to have more leadership and straightforwardness. It is a small childhood memory that I discussed with my friends as I was eating the bread, waiting for transportation. Although there are other winter street foods in Korea, Bream Bread and Crucian Carp Bread are among the most popular.
